Feel in love with the country when I moved there in my teens and the love affair have continued ever since. I&#8217;ll lived on and off in the UK for most of my adult life and I&#8217;ve come to love the people, the humour, the little villages and country pubs, the beautiful countryside and &#8216;the big smoke&#8217; London of course!  </p>
<p>Because of all this loveliness I thought I&#8217;d treat you to some super simple and very English traditional treats, the gorgeous spread of Lemon Curd and the classic Scone but with a twist! </p>

<p>I&#8217;ll start with the Lemon Curd, this is so easy to make and all natural ingredients. This is what you need for a smallish jar! </p>
<p><strong>Lemon Curd</strong></p>
<p>2 eggs<br />
5 tbs of sugar<br />
4 tbs of fresh lemon juice<br />
couple of pinches of lemon zest<br />
50 g of butter (cold butter in small cubes)</p>
<p>Add the sugar, eggs, lemon juice and lemon zest in a pot. Whisk the mix on low heat until it thickens, once thicken, add the butter cubes while stirring the mix. Let the curd cool off! While the curd cools off you can start making these delicious scones. I&#8217;m telling you, this curd and the scones make a beautiful marriage! </p>

<p><strong>Coconut &#038; Lemon Scones</strong> (makes 8 delicious bites!)</p>
<p>4,5 dl flour<br />
3 tbsp brown sugar<br />
1 tbsp baking powder<br />
3/4 tsp salt<br />
6 tbsp butter (cold butter in small cubes)<br />
4 tbsp coconut<br />
2 tsp grated lemon zest<br />
3 tbsp yogurt (plus you can brush tops of scones if you like)<br />
2 eggs, lightly beaten</p>
<p>Crank the oven up to 200*C. Add and mix flour, sugar, baking powder and salt in a bowl. Once mixed, add butter, coconut flakes and the lemon zest to the mix. In a small bowl mix together eggs and yogurt and then add it to the dry ingredients. Mix it up just a little bit, until all the ingredients come together nicely. Place the dough on a floured surface and knead just a little bit (only few times). </p>
<p>Flat the dough so it’s about 3 cm thick and cut it like on a picture. Transfer it on a baking paper and bake for around 20-22 minutes. Serve with the Lemon curd, or go all in with full tradition and serve with jam and cream!<br />

<p>This beautiful duo from Eagle Rock, California (where else!?) formed in 2011 and play some really gorgeous contemporary folk! The indie folk duo consisting of singers and guitarists Kenneth Pattengale and Joey Ryan, and they&#8217;ve been compared with greats like Simon &#038; Garfunkel and The Everly Brothers&#8230;not bad ay! </p>

<p>The Milk Carton Kids have released three albums <em>Retrospect </em>, <em>Prologue</em> (their first studio album) and <em>The Ash &#038; Clay (2013)</em>. I really like these guys, there is something about this music that makes me feel really good! The music makes me want to live of the land, grow my own vegetables, bake peach pies and make marmelades and compotes! </p>
<p>This could of course explain why I&#8217;m listening to The Milk Carton Kids when I use public transport&#8230;all of a sudden it&#8217;s not to bad being squeezed together with a million other people in a baking hot tram car, you can tell yourself that the armpit you are being forced to sniff is a bit of the countryside, win-win situation! </p>
<p>&#8230;Anyways, where ever you are, I believe you need to take a listen to this because it is pretty darn good (darn good? Im sure that say that in the States, right?)</p>

<p>My headphones are a very important accessory. They go wherever I go. I have different ones too.. The ones that came with my phone are like my everyday-on-the-tube-headset-headphones. I kinda find them pretty boring and not so great for music listening really. When listening to music I prefer my <a href="http://www.marshallheadphones.com/" target="_blank">Marshall </a>ones.. that I love to bits. But anyway, I thought I&#8217;d make my iphone ones a bit more exciting by perler beads!</p>
<p>I&#8217;m sure you&#8217;ve seen other peoples beaded headphones. I&#8217;ve been seeing them around for a while. And everytime I&#8217;ve seen someone with beaded headphones I wondered how they make them. When I found out how to, I also found out that it wasn&#8217;t really that great of a mystery&#8230; (Thanks Astrid &#038; Anna!) So I went out and bought some beads and started to bead! </p>
<p>Below you can see the result and also a quick guide how to do it yourself!   </p>

<p>I went for green and black pearls since these are two of my favorite colors and goes well together. I wanted to try glow-in-the-dark beads but couldn&#8217;t find them in the shop. I think that would be really cool though! </p>
<p>Start out with making a single cut through a bead and then just push it onto the cable! This is pretty much it. Now you have something to do for the next hour or so..! </p>

<p>I don&#8217;t know about you guys but I think that since the band <strong>Tame Impala</strong> there has been a lot of other psychedelic bands popping up here and there. </p>

<p>I stumbled across them the other day and I like it. Sure, it is nothing like you&#8217;ve never heard before and you can&#8217;t help but get reminded of <strong>the Byrds</strong> while listening to their tunes. Although apparently Temples call their music for &#8220;neo-psych&#8221;, and not just psych. Which I don&#8217;t know really means anything.. But anyway!</p>
<p>The sound is like I said very psychedelic and oozes of the 60&#8242;s. The kaleidoscopic effect you can hear on Shelter Song is achieved by used vintage equipment. Gives the song a nice feeling to it. <strong>Jack White</strong> surely isn&#8217;t the only one having a love for old vintage equipment anymore.. Everyone is doing it!</p>
<p>Their latest single ‘Colours To Life’ is released on 24 June and the band play a number of dates throughout the summer. (UK only)</p>

<p>It&#8217;s a cake that can be made in many variations and everyone have their &#8220;family recipe&#8221;. I&#8217;m gonna give you mine.</p>

<h3>This is how you do:</h3>
<p>- Preheat the oven to 175 ° C.</p>
<p>- Melt the butter in a saucepan.</p>
<p>- Mix sugar, vanilla sugar, cocoa powder, eggs, and salt in a bowl.</p>
<p>- Add the melted butter and add the flour and the chocolate drops last.</p>
<p>- Pour the batter into the baking tin. You&#8217;ll need one of<strong> <a href="http://www.lyckasmedmat.se/1499-thickbox/springform-masterclass-20-cm-kitchen-craft.jpg" target="_blank">these</a>.</strong></p>
<p>- Bake in the oven for about 15/20 minutes.</p>
<p>- Let the cake to cool and sprinkle some powdered sugar to make it pretty.</p>
<p>- Serve as it is or with some icecream or wipped cream! Yum!</p>
