Melanzane rolls with mozzarella.
This is a recipe so easy to make and so delicious to eat! These eggplant rolls works both as a sidedish or complete meal.
If you’re a fan of Italian food then I’m sure you’re gonna love these!
This is what you need:
– 1 /2 eggplants (depending on the size)
– 1 mozzarella (about 150gr.)
– tomato sauce
– oregano to taste
– chives to taste
– salt to taste
– extra virgin olive oil to taste
This is how you do:
Wash the eggplant, remove ends, cut into slices about 1/2 cm and grill them. (you can also fry them in a frying pan like I did)
Prepare the tomatosauce: heat olive oil in a pan, then add the chives and tomato sauce, a pinch of salt, oregano and cook over low heat for about 20 minutes.
Cut the mozzarella in half and then in sticks.On each eggplant slice add a stick of mozzarella and some tomato sauce and roll it.
Stick a toothpick to prevent them from falling a part in the oven.
Add some parmesan cheese on top to give it that extra “yummieness” (or don’t if you’re on a diet)
Heat in the oven for about 5 min or until you see that the cheese has melted. That’s it! Serve and eat!
