Friday Treat – Strawberry IceCream Cheesecake!

Hooray it is Friday – the best day of the weekend! Maybe you are going out tonight and are putting your dancing shoes on already in this very moment. But if not, I have for you a super delicious recipe for a stunning dessert you can make tonight to accompany your Friday night dinner! It is kind of a fusion of strawberry ice-cream and cheesecake. It really is YUMmy!! You have to make this, you won’t regret it.

Note that it needs to go in the freezer for 5 hours so maybe if you can’t start right away, I suggest you make it tonight and eat it after your Saturday night dinner instead.

This is what you need:

  • 200 g fresh cheese (philadelphia type)
  • 3 egg yolks
  • 2 dl sugar
  • 1 table spoon vanilla sugar
  • pinch of salt
  • 300 g fresh strawberries (or frozen)
  • 3 dl cream
  • 2 egg whites
  • 8 digestive biscuits

1. Start by separating your egg yolks from your the egg whites.

2. Whisk together the cheese, egg yolks and sugar. Add vanilla sugar and salt.

3. Squash the strawberries with a fork. Add them to the cheese and egg yolks. Then whip the cream and the egg whites in separate bowls.

4. Add to the batter the whipped cream, then the egg whites. Chop or crush the biscuits and add them in layers to the batter. When everything is mixed – put it into the freezer for at least 5 hours.

Voilá! Strawberry Ice-Cream Cheesecake!
