Autumn is here, it’s ok, I’ve come to terms with it…so better make the best of this dark, cold, rain drizzled time of year! A good way to cheer yourself up is to bake something (works for me!), you get to create something, eat something tasty (hopefully!), the owen keeps you warm and the smell of freshly baked goods puts everyone in a good mood!
This is one of my favorit cakes/breads…really delicious on it’s own or slightly toasted with some butter, yum! The orange adds a nice fresh flavour to the bread and the nuts some crunch! This is all of the ingredients you need…
Cranberry Orange Bread (makes 1 bread)
4 3/4 dl flour
2 ½ dl white sugar
1 ½ tsp baking powder
½ tsp bicarbonate
1 tsp salt
2 dl orange juice
1 big egg (room temprature)
30g melted butter
2 tbsp orange peel
handful of nuts (hazelnuts or walnuts)
1 tbsp brown sugar to sprinkle on top
Put the oven on 180 degrees, butter and flour a bread form.
Mix flour, sugar, baking powder, bicarbonate and salt in a bowl and set aside. Mix the orange juice, melted butter, egg and orange peel in another bowl, then pour the wet ingredients into the dry and combine to a smooth even batter.
Once you have an even batter, add the cranberries and then the nuts.
Pour the batter into the bread form and sprinkle the top with brown sugar (makes a lovely crust) then bake for around 1 hour in the middle of the oven. The cake is done when the stick is dry! Let the cake cool off for about 20 minutes before serving.
